Pinot Noir

Variety:

100% Pinot Noir. Vintage: 2007

Origin:

this wine is made with Pinot Noir grapes stemming from the Central Valley—approximately half from the Curicó Valley and half from the Coastal Maipo Valley. The vineyards are planted on gentle hills, vertically trellised and drip irrigated.

Climate:

2007 was an atypical year. Temperatures were lower than usual, and the red varieties were generally harvested at least 10 days later than in a normal year. The average alcohol levels were 1° lower than normal, and the acidity higher, which contributed to both color and freshness.

Harvest:

the grapes were hand picked during the last week of March and the first week of April. Vineyard’s yields were 8 tons/hectare.

Vinification:

following a 3-day cold soak, alcoholic fermentation took place with selected yeasts at controlled temperatures of 25°–27°C (77°–81°F), with 4 short pumpovers per day. Total maceration lasted 15 days, and 100% of the final blend was aged for 10 months in French oak barrels, 30% of them were new.

Tasting Notes:

Color: light but brilliant ruby red
Aroma: red fruits such as berries, cherries, and plums, which are well-balanced with the toasted notes from the aging in oak.
Palate: fresh and fruity, along delicate, soft, and harmonious tannins, with a long finish.
Drink now or hold for 3 to 4 years.

Food & Wine Pairing: ideal to pair with game birds, fishes, such as tuna or salmon, and mild cheeses. Serve at 14°–15°C (57°–59°F).
