Origin:
this wine begins with grapes grown in Viña San Pedro’s vineyards planted in the cool Casablanca Valley. The region is highly influenced by the Pacific Ocean, which results in an ideal cool climate that allows the grapes to ripen slowly. The vines are vertically positioned and drip irrigated
Harvest:
the grapes were hand picked during the second week of April. Vineyard’s yield was 9.5 tons per hectare.
Vinification
half of the grapes were direct pressed, and half were destemmed prior to the alcoholic fermentation with selected yeasts at controlled temperatures of 15°–16°C (59°–61°F). 70% of the wine was fermented in French oak barrels, where it was allowed to age for an additional 4–6 months. The remaining 30% of the wine was fermented in stainless steel tanks to contribute freshness and fruit to the final blend. This wine did not undergo malolactic fermentation.

Tasting Notes:
Color: intense bright yellow.
Aroma: intense, complex combination of aromas of tropical fruits, such as bananas and cherimoyas, and notes of hazelnuts and toffee.
Palate: fresh, full-bodied, and fruity. Rich and creamy, with very good acidity, abundant fruit, a soft note of vanilla, and an intense, complex, and persistent finish.
Food & Wine Pairing
ideal with full-bodied fish such as Pacific salmon and tuna, pastas with cream-based sauces, and goat cheese. Best served at 12°C (54°F).
