35° SOUTH RESERVA SAUVIGNON BLANC 2008
Our Sauvignon Blanc combines the main features of the Curicó and Elqui valleys, obtaining a very balanced and intense wine. Curicó contributes with some fruity and citric notes, while the Elqui offers its fresh and mineral touches. During the whole vinification process we took great care about the aromatic potential of our grapes. They underwent a brief resting on its light lees, in order to gain final complexity. We managed a very fruity wine, with a pleasant acidity.

Curicó and Elqui Valley.
Variety
100% Sauvignon Blanc. Yield by Hectare: 11 Ton/ha.
Harvest:
hand-picked.
Vinification
Grapes and must were macerated at 10°C during 12 hours
previous to the press, in order to strengthen the wine’s
aromatic potential. Fermentation was carried out with very
clean must at low temperatures. After the fermentation, light
lees were kept in suspension.
Barrel Aging
In stainless steel tanks.
Winemaker’s Notes
A very intense and elegant wine. Outstanding tropical fruit and grapefruit aromas, combined with fresh and mineral aromas. This is a very fruitful wine, with an appealing acidity.
Food Pairing
Ideal to pair with shellfish and salads, or to enjoy as aperitif. Suggested Serving Temperature:
10°C to 12°C.

Ready to enjoy now. Keep less than two years.
