Merlot

35° SOUTH RESERVA MERLOT 2008

Made with grapes stemming from the Maule and Maipo valleys. In the final blend, Maule delivers the spicy character and the structure, while Maipo contributes with red fruit aromas and softness. Fermentation was carried out in small tanks in order to obtain an optimal extraction. This is a very intense wine in the nose, and very soft on the palate.

Maule and Maipo Valleys.

Variety:

100% Merlot. Yield by Hectare: 8 Ton/ha.

Harvest:

hand-picked.

Vinification:

Fruity aromas extraction and obtaining soft tannins were the factors favored during the vinification. Fermentation took place in small volume tanks and no post-fermentative maceration was made.

Barrel Aging:

Six months in French oak barrels.

Winemaker’s Tasting Note:

Spicy and fruity aromas in combination deliver a full character wine. Very concentrate on the palate, along a great softness and a long final persistence.

Food Pairing:
Pastas and pizza, but also, Parma ham and soft cheeses. Suggested Serving Temperature: 17°C to 19°C.

Keeping Potential:

Ready to enjoy now, or keep up to four years.
