35° SOUTH RESERVA CARMENERE 2008
Our Carmenere is made with grapes steming from two of the best possible valleys for this variety, given their temperature and soil conditions. The harvest time is determined by the point of highest fruit’s concentration and best tannins performance. This is a ripe wine, in which the wood’s aim is to deliver toasted notes and softness to the palate.

Maule and Rapel Valleys.
Variety:
100% Carmenere. Yield by Hectare: 8 Ton/ha
Harvest:
hand picked.
Vinification:
In order to favor the extraction of fresh fruit’s aromas and good tannins, maximal temperatures reached only 26°C and no post-fermentative maceration was made.
Barrel Aging:
Six months in French oak barrels.
Winemaker’s Tasting Notes:
Very intense in the nose, with aromas to chocolate and sweet
spices, interlaced with fresh fruit notes. Full bodied and
sweet tannins on the palate, with a soft and very pleasant
finish.
Food Pairing: Spicy dishes, such as Risotto, Paella, and ripe cheeses. Suggested Serving Temperature:
17°C to 19°C.
Cellaring Potential:
Ready to enjoy now, or keep up to four years.
