35° SOUTH RESERVA CABERNET SAUVIGNON 2008
Our selection of vineyards in Maipo and Aconcagua valleys provide grapes with very distinctive characteristics, which become integrated into a great Cabernet Sauvignon. A wine with an intense fruit character, concentration and softness, well complemented by the contribution of its aging in oak.
Origin:
Maipo and Aconcagua Valleys.
Variety:
100% Cabernet Sauvignon.
Harvest:
hand-picked. Yield by Hectare: 8 Ton/ha.
Vinification:
Fermentation takes place in small volume stainless-steel
tanks, in order to obtain an optimal extraction. Maximal
fermentation temperatures reached 26°C. Once finalized, the
wine was kept in contact with the lees during 10 days.
Aging:
Six months in French oak barrels.
Winemaker’s Notes:
Intense ripe red fruit aromas, with cassis and vanilla notes. On the palate a very concentrate wine, with sweet and
elegant tannins, and a nice persistent finish.
Food Pairing: Meats such as steak and duck, excellent companion for ripe cheeses. Suggested Serving Temperature 17°C to 19°C.
Ageing potential:
Ready to enjoy now, or keep up to four years.
