100% Malbec
Origin:
This wine is made with some of our best Malbec grapes stemming from Viña San Pedro’s vineyards in the Maule Valley. The vineyard is planted in a zone with gentle hills, thin and well-drained alluvial soils. The grapes are grown in a vertical trellis system, with drip irrigation.
Climate:
The season 2007 was very atypical. Temperatures were lower than usual, what resulted in the red varieties being harvested at least 10 days later than in a normal year. The average alcohol levels were 1% lower than the norm, and the acidity was higher, all of which favored the development of color and freshness in the wine.
Harvest:
The grapes were hand-picked very early in the morning during the last week of April. The vineyard’s yield was 7 tons/ha.
Vinification:
Cold maceration for 4 to 5 days. The alcoholic fermentation takes place with selected yeasts and controlled temperature between 28°C to 29°C. Fermentation involves 6 short daily pump overs, in order to keep the lees wet during the whole process and to obtain a smoother / softer extraction. Total maceration lasted 30 days. 100% of the mixture was stored in French (95%) and American (5%) oak barrels for about 12 months. 50% of them were new and the rest of second use.

Tasting Notes
Color: intense and deep ruby red, with violet shades.
Aromas: great aromatic intensity, marked by cherry, berries and plums, combined with toasted and smoked aromas, and subtle notes of vanilla, tobacco and aniseed.
Palate: intense, balanced and very well structured wine, with very present, but mature tannins. Presents an intense and long finish. Advisable to be served immediately, or kept for 4 to 7 years.
Service Suggestion:
ideal to pair with red meats, wild boar and ripe cheeses. Best served between 16° to 17°C.
