Cabernet Sauvignon 2007

100% Cabernet Sauvignon.

Origin

this wine is made with Viña San Pedro’s finest Cabernet Sauvignon grapes grown in the Maipo Valley. The vineyards are planted on well-drained and thin alluvial soils and are trained to low vertical shoot position with controlled drip irrigation.

Harvest

The grapes were hand picked during the last week of April. Vineyard’s yield was 7.2 tons/ha.

Vinification

Cold maceration for five days. Grapes are then fermented with selected yeasts at controlled temperatures of 82°–84°F (28°–29°C) with five pump-over per day. Total tank time was 30 to 35 days. 100% of the blend was aged for 12 months in French (95%) and American (5%) oak barrels, half of which were new, and the remaining 50% were second use.

Tasting Notes

Color: intense and deep ruby red.
Aroma: powerful nose, marked by elegant and intense redcurrants and blueberries aromas, interlaced with chocolate, mocha and cedar notes.
Palate: very dense and concentrated, with present and ripe tannins, and also, a very good balance between tannins, acidity and wooden notes. To be enjoyed immediately, or hold for 7 to 9 years.

Service Suggestion: ideal to pair with red meats, venison, game birds and strong cheeses. Best served at 17 to 18°C.
